They say that the difference between Moroccan and Tunisian couscous is that the former does not carry tomato and the Tunisian does.
However, it seems that there are other variants between both countries since I have never seen in Morocco such an extensive combination of foods on the same plate: fish, sausages, lettuce, lamb, olives, potatoes, carrots, onions and of course, couscous
